Brian Mercury was recently named Food & Wine’s ‘The People’s Best New Pastry Chef’ of the East Region. As Executive Pastry Chef of Harvest Restaurant in Cambridge’s Harvard Square, Brian fuses contemporary techniques with high-quality local ingredients. AFC is honored to have him join us for the annual Match Gala on June 5th and we hope you are excited to meet him as well.
From his love of Somerville-based Taza chocolate to making his own sea salt from Maine’s Atlantic waters (which he appropriately calls ‘white gold’), Brian’s local focus is a perfect fit for the constantly-changing seasonal menus at Harvest. Brian graduated from the Culinary Institute of America in Hype Park, NY, and then moved to Boston and began working at The Charles Hotel. At The Charles Hotel, he learned from Executive Pastry Chef Dan Angelopolus and Rialto’s Executive Pastry Chef Susan Abbott.
Brian describes his “quintessential dessert,” as “Taza chocolate crémeux with housemade sea salt, salted caramel and vanilla mascarpone.” Any dessert with a description like that is something we would love to try!
